Tasty Baked Egg Plant
Here I made NANNY PAT’S Baked Egg Plant as my side dish…I’m not a huge egg plant fan but I wanted to give it a go, and oh yes, it was wonderful. I took a pic for you to see, and I had garlic mayo and a sweet chili sauce. It was crispy outside and juicy soft inside, definitely will make this again, and real easy to do too!

This is a great side dish idea for you, and very flexible with flavours so you can swap and change to suit your own taste.In the oven or on the grill (in foil), and add whatever flavours you like too! even a blob of sour cream or mayo or cheese on the top when they’re done and ahhhh delish!

Sesame Prawn Toasts
This is one of my favourite sides! I often have these Sesame Prawn Toasts with a sweet chili dipping sauce or as an accompaniement to my Chinese Chicken & Corn (Egg Drop) Soup. You can also make these using chicken if you prefer, or even make both prawn and chicken for variety. Always a hit at buffets and parties too so be sure to make LOTS!
